Ingredients

1/4 cup PopSweet Sweetener
4 tbsp butter, melted
1/4 cup lemon juice
1 whole egg
2 egg yolks
2 tbsp sour cream
Directions
To make the lemon curd, use a small microwave safe bowl and melt the butter, then whisk in the PopSweet, lemon juice, whole egg and egg yolks until fully combined.
Microwave in 1 minute intervals on high, whisking very well in between each minute, until the curd is thick. This should take about 3-4 minutes depending on your microwave.
After the final whisk, cover with plastic wrap and let cool to room temperature, then place in the fridge until ready to use in your favorite recipes.
