Ingredients

1 package KB Chewy Chocolate Chip Cookie mix
4 tbsp butter, softened
2 oz cream cheese, softened
16 oz cream cheese, softened

1/4 cup PopSweet (add more if desired)
1/3 cup sour cream
1 tsp vanilla extract
1 package, or 2 1/4 oz, gelatin
2 tbsp water

4 oz heavy cream

Directions
Use a 8 inch springform pan, or a pan of similar size lined with parchment paper.
Mix together the KB Chewy Chocolate Chip Cookie mix along with the softened butter and cream cheese. Press into the bottom of the pan in an even layer. Set aside.
Place the 2 tbsp water into a small microwave safe bowl and sprinkle the gelatin gently over the top. This will “bloom” the gelatin. After about a minute, microwave the gelatin for 10-15 seconds to warm up the gelatin mixture. It should look thick and have no clumps. Let cool slightly.
In a bowl, cream together the softened cream cheese, PopSweet, sour cream and vanilla extract using a handheld mixer. Pour in the gelatin mixture and mix very quickly until it is fully incorporated.
Pour the cheesecake on to the top of the cookie layer and spread out until it makes an even layer. Set aside.
In a small microwave safe bowl, add the heavy cream and microwave for 60 seconds until hot. Add in the chocolate chips and let sit for about a minute. Then, stir the chocolate chip and heavy cream mixture until it becomes a glossy thick ganache. This can take a few minutes to fully combine.
Pour the ganache layer on top of the cheesecake layer. Place in the fridge for 3-5 hours or until fully chilled and cooled.
