Using our Mini Chocolate Chips in this recipe works perfectly! The melted chocolate sauce turns hard as it comes into contact with our favorite KetoJoy ice cream and makes a perfect “shell” on top. It’s crispy, crunchy and cold! (You can even spoon it into your churning KetoJoy ice cream toward the end to make crispy pieces mixed in!)
3/4 cup KetoBakes Mini Chocolate Chips
2 tbsp refined coconut oil
Vanilla, Chocolate, Coffee, or Strawberry KetoJoy IceCream
In a small bowl, combine the chocolate chips and coconut oil.
Microwave in 20 second intervals until everything is melted and forms a smooth consistency.
(You can also do this step using a double-boiler on the stove.)
Let cool completely, then pour over you favorite KetoJoy ice cream and watch as it makes a crisp chocolate shell on top.
