We’re starting the holiday season off right with this delicious and tender Cranberry Lemon Loaf. Tart cranberries are surrounded by our fluffy and sweet lemon loaf to give you the perfect keto dessert worth gifting.

Ingredients

1 package Iced Lemon Loaf mix
4 eggs, room temperature
2 oz cream cheese, softened
4 tbsp butter, softened
1 cup fresh cranberries
1 tsp xanthan gum
Icing packet from Lemon Loaf mix
1-2 tbsp heavy cream
For the Icing:
Directions
Preheat oven to 350 and line a loaf pan with parchment, then spray with cooking spray. Set aside.
Toss the cranberries with the xanthan gum to coat. Set aside.
In a large bowl, pour in the Iced Lemon Loaf mix, setting aside the icing packet. Then , add in the room temp eggs, softened cream cheese and softened butter. Using a handheld mixer, mix until the batter is fully combined.
Add the cranberries to the batter and gently fold them in.
Pour the batter into the prepared loaf pan and bake for 30-40 minutes. Let cool when finished baking.
After the Lemon Loaf has cooled, mix the icing packet and heavy cream well, until it is a smooth icing. Pour over the top of the loaf and smooth, if necessary. Enjoy!
