Cranberry Parfaits

Delicate Cranberry Trifle Parfaits, will be the star of the show at your next winter get-together. The rich Vanilla Pastry Cream and tart Cranberry Sauce work perfectly together to create a special dessert that will be asked for over and over again.

Ingredients

1 package KetoBakes Vanilla Cake, baked and cooled

½ package Vanilla Pudding and Pastry Cream
1 ½ egg yolks
¼ cup heavy cream
⅓ cup almond milk
1 cup fresh cranberries

2-3 tbsp Berry Pie Filling and Jam mix

Directions
In a small sauce pan, add the cranberries and pie filling mix. Cook over medium until the filling is thick. Let cool.
In another small sauce pan, whisk together the cream and almond milk until simmering.
Whisk in the egg yolks, then sprinkle in the pastry cream mix. Cook another minute, then take off the heat to cool.
To assemble the parfaits, cut the cake into cubes or equal slices that fit into the cup of your choosing. Add a layer of cake to the bottom of the cup, then add 2 tbsp pastry cream. Add 1 tbsp of the cranberry sauce on top of the cream pudding layer, swirling a little.
Repeat the process one more time. After adding the last layer of cranberry, use a toothpick or knife to swirl the cranberry sauce into the pastry cream to create a cute design.
Repeat with the remaining cups, then cover we plastic wrap and chill in the fridge until ready to serve. Enjoy!
