These lemon bars are our take on the classic recipe made keto friendly. And EXTRA EASY using our pie crust mix! Subtly sweet and tangy, these bars are cool and refreshing and perfect for a spring day.
Preheat oven to 350 and line a square 9 inch pan with parchment paper, making sure to cover up each side with the parchment. Grease with cooking spray and set aside.
Make the Butterflake Pie Crust according to package directions, saving half of the unbaked crust for another recipe.
Add the pie crust to the pan and press down evenly until the bottom is smooth and even. Bake for 10 minutes.
Whisk together the PopSweet and xanthan gum and set aside.
In a large bowl, combine the lemon juice, lemon zest and eggs. Add in the PopSweet mixture and whisk until everything is combined well. Pour into the pie crust and bake for 30-35 minutes.
Let cool, then chill before serving.
