Ingredients

1 KetoBakes Vanilla Cake Mix
-
1 KetoBakes Vanilla Buttercream Frosting Mix
1 cup cranberries
1 Tbsp orange peel
1 1/2 cups allulose (plus 2 Tbsps reserved for coating)
3/4 cup water

1/3 cup (66 grams) KetoBakes PopSweet
2 Tbsp heavy cream

Glaze
Directions
Make "Sugared" Cranberries for Garnish (optional):
Place 1 cup cranberries into simple syrup (1½ cup allulose + ¾ cup water) and soak for an hour, stirring occasionally. With a slotted spoon remove the cranberries and place them on a foil or silpat lined baking sheet and let them dry until tacky. Drop them into granulated allulose to coat. Save simple syrup to brush onto your cakes.
Mix Cake:
Mix KetoBakes Vanilla Cake Mix according to package directions. Add 1 Tbsp. grated orange peel (zest) and 1/2 cup of the sugared cranberries and fold into cake batter. Bake in a 9 in. square pan sprayed with avocado oil and lined with parchment. Bake for about 25 mins till toothpick comes out clean. After cooling 10 minutes, cover with foil to keep it moist. Let cool 1 hour.
Mix Frosting:
Using KetoBakes Vanilla Buttercream Frosting, mix according to directions. Cover and set aside.
Back to the Cake:
Lift cake out of pan. Using a small round cutter cut out about 9 little cakes. Lightly brush cakes with leftover simple syrup. Slice cakes across center and fill with KetoBakes Vanilla Buttercream Frosting.
Make the Glaze and Decorate:
With a fork, mix ⅓ cup (66 grams) of PopSweet with 2 tablespoons heavy cream. If it’s too thick add more heavy cream a few drops at a time. Drizzle over cakes and garnish with orange wedge and the sugared cranberries.
