Becky's Notes | Backstory

I personally used to love eating Brownies. Real Brownies. Made with sugar. Like gooey, fudgy delectable, almost underbaked confections. 

But for the past 20 years I have not indulged in such...and have for the same amount of time tried "healthy" brownie mixes and "healthy" brownie recipes from bloggers who claim theirs to be THE BEST FUDGY BROWNIES. Only to be sorely disappointed yet once again with something that was yes, made of chocolate, but was far removed from my distinct pleasurable memory of what sugary brownies tasted like. Just - never mind. It must not be possible. After all isn't "the brownie" made almost entirely of sugar to get that gooey, chewy effect?

And that was how it was. Until we started KetoBakes. And honestly, something switched on in my head and I thought "I want Brownies again". Sugar free, Gluten Free, Grain Free, Clean Ingredients, Fudgy Keto Brownies! It had to be possible. As I said, I didn't like any of the healthy mixes out there and hadn't found a single recipe I liked. Ours had to taste rich, chocolatey (without having to melt chocolate), sweet (without weird cooling effects), fudgy (that slightly underdone texture) and chewy! 

Well, a lot has been learned and shared by some stellar Keto Baking pioneers out there! We are learning quickly what kind of properties some of these strange keto ingredients have and how they behave in baking! But unless you want to experiment 50 times to get your recipe just right, wasting lots of expensive ingredients, go ahead and just enjoy my mix. It requires some basic ingredients you most likely have on hand in your keto cupboard. 

So when those late night chocolate cravings hit - you're covered! Just promise me you'll pop them in the freezer before you cut them to help them set up and get properly sweet and chewy! And don't forget that luscious GANACHE TOPPING! I wanted it included in the kit, because that ganache just takes it over the top. Enjoy. :)
