Gingerbread Pancakes with Crème Anglaise Recipe

KB Mix Needed:
Gingerbread Pancakes

Ingredients:

For the cake:
1 package Gingerbread Pancakes
4 eggs
4 tbsp avocado oil
½ cup heavy cream
2/3 cup water


For the glaze:
4 oz cream cheese, softened
4 tbsp butter, softened
2-4 tbsp heavy cream, as needed to thin
1 tsp vanilla extract
4 tbsp sweetener
Zest of 1 orange


Directions:


1. Preheat oven to 350 and line a 13x9 pan with parchment paper and spray with cooking spray.
Set aside.
2. Add all the cake ingredients to a bowl and mix together until the batter forms. Pour into the
prepared pan and bake for 28-30 minutes. The center of the cake should spring back when
lightly touched.
3. Let cool, then place in the fridge for 1 hour.
4. For the glaze, mix the cream cheese and butter with a handheld mixer until fully combined, then
add in the vanilla and sweetener. Using a spatula, gently fold in ¾ of the orange zest.
5. Pour on top of the cooled cake and smooth out to create an even coating on the top. Sprinkle
the top with the leftover orange zest for garnish.
6. Place in the fridge until the glaze is firm, which makes cutting the cake easier. Slice and serve!
