Strawberry Cream Cheese Scones

Tea time anyone? Creamy, flaky scones with tart strawberry bits baked in! Drizzle with icing and wow! An easy low carb fruit scone that melts in your mouth!

 

Ingredients:

1 package KetoBakes Buttery Biscuit Mix
2 tbsp PopSweet
¼ cup cream cheese, softened
4 tbsp heavy cream
2 eggs
4 tbsp unsalted butter, melted
¾ cup fresh strawberries, diced


Optional;
Glaze, for topping
Extra sliced strawberries, for garnish


Directions:
1. Preheat the oven to 375 and line a baking sheet with parchment paper. Set aside.
2. In a large bowl, mix the cream cheese and heavy cream together with an electric mixer.
Add in the egg and continue mixing. Pour in the Buttery Biscuit mix and mix until fully combined. Add the melted butter, scraping down the sides of the bowl if necessary. Gently fold in the strawberries until evenly incorporated.
3. Scoop onto baking sheet, in about 9 even scoops, and then shape into triangles, ifdesired.
4. Bake for 13-15 minutes, until golden.

Let cool completely before drizzling icing made of PopSweet and milk or cream after reaching desired consistency. (Try 2 Tbsp sweetener plus 1-2 tsp liquid)
