Lemon Bars Recipe

KB Mix Needed: 
Butterflake Pie Crust


Ingredients:

½ KetoBakes Butterflake Pie Crust, prepared (save the other half for another recipe.)
1 ½ cups lemon juice (about 6 lemons)
Zest from 3 lemons
6 eggs
1 1/3 cup PopSweet
½ tsp xanthan gum


Garnish:
KetoBakes Vanilla Buttercream Frosting
Powdered Erythritol
Lemon wedge


Directions:


1. Preheat the oven to 350 and line a 9” square pan with parchment, enough to go up the
sides of the pan. Spray with cooking spray.
2. Press the prepared pie crust into the bottom of the pan. Bake for 10 minutes.
3. In a small bowl, whisk together the PopSweet and xanthan gum and set aside.
4. In a large bowl, combine the lemon juice, lemon zest and eggs. Whisk in the PopSweet
mixture until combined, then pour onto the baked crust.
5. Bake for 30-35 minutes. Let cool, then chill completely before cutting.
